HOI AN SPECIALTIES

Normal and popular, Hoi An food has its own nuance. The nice, different, unique dishes of Hoi An such as: cao lau, quai vac, luc tau xa… are very appealing to anyone who first hears about them.

Visitors with a little money visiting Hoi An always remembered Cao Lau which was considered by Quang Nam people a special symbol for Hoi An. Cao Lau different from My (vermicelli) in that it was not made from rice flour, but from rice flour soaked in the ash water cooked by fire- wood for three times (asheds taken from burnt wood of Cham Island) , therefore it was solid and naturally yellow.

On the Cao Lau noodles were some meat slices meat mixed with fat made from fried noodles served with vegetables and bean sprouts, good eaters would find out the special flavour of the dish. It was said that only some wells in Hoi An were used to make Cao Lau noodles.

SEA FOODS

In fact, besides the expensive Salangane dishes, or Cao Lau reserves for wealthy business people,, not know to normal locals, other dishes were popular. Strangely enough, as a special favour from the Emperor of skies, fishes, cuttle fishes, shrimps and crabs in Hoi An were very good.

Crabs, especially crabs with roe during the moonless nights attracted the professional connoisseurs from other places.
